Strawberry tartlets are one of those desserts that instantly feel like summer. Traditionally, they are made with a crisp pastry shell, vanilla custard or pastry cream, and fresh strawberries arranged neatly on top.

This version keeps the strawberry tart simple by using ready-made pie pastry and vanilla custard, but adds one ingredient that completely changes the flavour: cardamom.

Strawberries are one of those ingredients that barely need an introduction. During summer, they appear everywhere, from market stalls to family gatherings, and they remain one of the most loved fruits in Scandinavian baking.

Cardamom is not usually the first spice people think of when making a strawberry dessert. Most recipes pair strawberries with vanilla, lemon, mint, or basil. Yet cardamom works surprisingly well with strawberries, adding warmth and fragrance while allowing the fruit to remain the star of the show.

Mixed into the vanilla cream, the cardamom turns a familiar strawberry tartlet into something that feels a little more special and a little more connected to the flavours many of us recognise from Middle Eastern, Persian, Turkish, and South Asian kitchens.

The result is an easy cardamom strawberry tartlet that looks bakery-made but comes together with a few simple shortcuts. Fresh strawberries, vanilla cream, and cardamom may sound like an unusual combination, but after one bite it becomes clear why these flavours work so well together.

1. Cut the pastry

  • Place the ready-made pastry on a work surface.
  • Using a small bowl slightly larger than your tart forms, cut circles from the dough.
  • Place each pastry circle into a tart form and gently press it into place.
  • Prick the base several times with a fork.

🥧
Why prick the pastry? The small holes allow steam to escape during baking and help prevent the pastry from puffing up.

2. Bake until golden

  • Bake according to the package instructions, placing the tartlets in the middle of the oven.
  • Most ready-made pie pastries recommend baking at around 200–220°C / 390–425°F, though always check the package as brands vary.
  • The tartlets shown here were baked using top and bottom heat and became golden after about 25 minutes, even though the package suggested a longer baking time.
  • Bake until the pastry is lightly golden and crisp.
  • Allow the tart shells to cool completely.
⚠️
Important: Let the pastry cool fully before adding the cream. Warm pastry can cause the filling to soften too much.

3. Make the vanilla cream with cardamom

  • Prepare the vanilla custard according to the packet instructions.
  • Whip the cream separately until softly whipped.
  • Fold the whipped cream into the vanilla custard.
  • This makes the filling lighter and helps balance the sweetness.
  • Add the freshly ground cardamom and mix well.
🌿
Cardamom tip: Freshly crushed cardamom seeds have a much stronger flavour than pre-ground cardamom. Simply open a few green cardamom pods and crush the seeds using a mortar and pestle. The fragrance is worth the extra minute.

4. Fill the tartlets

  • Spoon the cardamom vanilla cream into the cooled tart shells.
  • Fill them almost to the top, leaving enough room for the strawberries.
  • Gently smooth the surface with the back of a spoon if needed.
  • Carefully remove them from the tart forms before the next step.

5. Arrange the strawberries

  • Slice the strawberries into thin slices.
  • Arrange them in overlapping circles, working from the outside toward the centre of each tartlet.
  • Continue layering until the cream is covered and the strawberries resemble flower petals.
  • A flower pattern looks impressive but is surprisingly easy to create.
  • Serve immediately or chill until ready to serve. 🍓
  • For the best texture, enjoy the cardamom tartlets on the same day.

Why cardamom works well with strawberries and vanilla

If you have ever wondered what spice goes well with a strawberry dessert, cardamom is one of the most underrated answers.

Cardamom is not the most common spice used in strawberry desserts, which is exactly what makes this flavour combination feel fresh and a little unexpected.

Vanilla and strawberries are a classic dessert combination, but cardamom brings a warmer, more fragrant note. Its citrus-like aroma works well with both fresh strawberries and sweet vanilla cream, giving these cardamom strawberry tartlets a deeper flavour without overpowering the fruit.

For many Muslim families, cardamom is also a familiar flavour. It appears in tea, coffee, cakes, biscuits, rice dishes, and festive desserts across many cultures. One spoonful and these tartlets feel less like a standard strawberry dessert and more like something connected to home.

Cardamom in Muslim food traditions

Cardamom has been traded across Persia, the Arabian Peninsula, the Indian subcontinent, and parts of North Africa for centuries.

Today it remains one of the world's most valuable spices and is second only to saffron and vanilla among commonly used culinary spices. It is perhaps most famous for its role in coffee and tea, but it has long been used in desserts as well. Its ability to add warmth without heaviness is exactly why it works so well in these strawberry tartlets.

Tips and variations

  • A single fresh mint leaf on top is a small detail, but it adds colour, freshness, and works beautifully with the strawberries and cardamom. 🌿🍓
  • Use raspberries instead of strawberries.
  • Add a few chopped pistachios on top for extra texture.
  • Replace vanilla custard with homemade pastry cream.
  • Make one large tart instead of individual tartlets.

Easy cardamom strawberry tartlets for guests or tea

The best part: enjoying a freshly made cardamom strawberry tartlet.

These cardamom strawberry tartlets are proof that not every dessert needs to be made entirely from scratch. Ready-made pastry and packet custard keep the process simple, while fresh strawberries and cardamom give the tartlets a flavour that feels thoughtful and special.

The combination is fresh, creamy, fragrant, and surprisingly elegant for something that comes together with so little effort. Whether served with afternoon tea, brought out for guests, or enjoyed on a summer evening, they are the kind of dessert that looks far more complicated than it really is.

Sometimes a few good ingredients and one well-chosen spice are all you need.
